Ingredients
  

  • 12 ounces whole wheat elbow macaroni
  • 2 cups cauliflower florets
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 2 cups low-fat milk
  • 1½ cups shredded sharp cheddar cheese
  • ¼ cup cream cheese, softened
  • ½ teaspoon garlic powder

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook macaroni according to package instructions until just al dente. Drain and set aside.
  3. Steam cauliflower until very tender, about 8–10 minutes. Blend until smooth and creamy.
