This creamy pumpkin soup is made with canned pumpkin, so there’s no peeling or roasting a whole pumpkin. Onion, garlic and a little cinnamon and smoked paprika give it a warm, savory flavor that tastes like fall without tasting like pie.

It comes together in one pot in about 35 minutes, and a splash of cream at the end makes it smooth and rich. Serve it with bread or a grilled cheese for a cheap, cozy dinner.

Ingredients and Swaps

  • Canned pumpkin: buy plain 100% pumpkin, not pumpkin pie filling, which already has sugar and spices in it.
  • Broth: chicken or vegetable broth both work. Use vegetable broth to make the soup vegetarian, and low-sodium broth if you’re watching salt.
  • Cream: heavy cream makes it richest. Half-and-half or whole milk work too, or use canned coconut milk for a dairy-free version.
  • Spices: cinnamon and nutmeg add warmth, and smoked paprika keeps it savory. A pinch of cayenne adds a little heat.
  • Fresh pumpkin: about 3½ cups of roasted, pureed pie pumpkin or butternut squash can replace the two cans.

Tips for the Best Pumpkin Soup

  • Cook the onion until soft. Five or six minutes over medium heat gives the soup a sweet, rounded flavor.
  • Toast the spices. Stirring them into the hot onion for a minute wakes them up.
  • Blend carefully. An immersion blender is easiest. If you use a regular blender, fill it only halfway and vent the lid so steam can escape.
  • Don’t boil after adding cream. Keep the heat low so the cream doesn’t separate.
  • Taste at the end. Broth brands vary a lot in salt, so add salt last.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon smoked paprika
  • 2 cans (15 oz) pure pumpkin not pie filling
  • 4 cups chicken or vegetable broth
  • 1 tablespoon brown sugar optional
  • 1 teaspoon salt plus more to taste
  • ¼ teaspoon black pepper
  • ½ cup heavy cream or half-and-half

Method

  1. Heat the olive oil and butter in a large pot over medium heat. Add the onion and cook for 5 to 6 minutes, until soft.
  2. Add the garlic, cinnamon, nutmeg and smoked paprika and cook for 1 minute, stirring.
  3. Stir in the pumpkin, broth, brown sugar, salt and pepper. Bring to a simmer, then cook for 15 minutes, stirring now and then.
  4. Blend the soup until smooth with an immersion blender, or carefully in batches in a regular blender with the lid vented.
  5. Return the soup to low heat and stir in the cream. Heat through without boiling. Taste and add more salt if needed.

Notes

  • Use vegetable broth to make it vegetarian, or coconut milk and olive oil to make it dairy-free.
  • Freeze before adding the cream for the best texture, then stir the cream in when reheating.

What to Serve With It

Pair it with soft dinner rolls, a slice of cornbread or a grilled cheese sandwich. For a full soup night, see our budget minestrone and broccoli cheddar soup.

Toppings are optional but nice: a swirl of cream, toasted pumpkin seeds, black pepper or a few croutons.

Storage and Make-Ahead

  • Fridge: keep in a covered container for up to 4 days.
  • Freezer: freeze for up to 3 months. For the smoothest texture, freeze it before adding the cream and stir the cream in when you reheat.
  • Reheat: warm over medium-low heat, stirring often, and add a splash of broth if it has thickened.

Pumpkin Soup Questions

Can I use pumpkin pie filling?

No. Pie filling has sugar and spices already mixed in, so the soup would taste like dessert. Look for cans labeled 100% pure pumpkin.

How do I make pumpkin soup vegan?

Use olive oil instead of butter, vegetable broth and canned coconut milk instead of cream. Use maple syrup instead of brown sugar if you want it fully plant-based.

Can I make it without a blender?

Yes. Canned pumpkin is already smooth, so just chop the onion very finely and whisk well. The soup will have a little more texture.

Why is my pumpkin soup bland?

Usually it needs more salt or a little acid. Add salt a pinch at a time, or stir in a squeeze of lemon juice or a splash of apple cider vinegar.
