This hash cooks diced sweet potatoes until golden and tender, wilts in spinach and finishes with eggs cooked right in the skillet.

Sweet potatoes and eggs are two of the most affordable ways to build a filling meal. The recipe is part of our week of dinners from 10 ingredients.

It’s a breakfast-for-dinner meal in one pan, in about 35 minutes.

Ingredients and Swaps

  • Sweet potatoes: Peeled and cut into ½-inch cubes. Regular potatoes work too.
  • Eggs: Cooked in wells in the hash.
  • Spinach: Wilted in before the eggs go on. Kale is a sturdier option.
  • Garlic, paprika and chili flakes: For flavor and gentle heat.

Tips for Golden Sweet Potatoes and Set Eggs

  • Dice small. Half-inch cubes cook through in 15–18 minutes.
  • Speed it up. Microwave the diced sweet potatoes for 3–4 minutes first to cut the stovetop time.
  • Stir only now and then. Let the potatoes sit so they brown.
  • Cover for the eggs. A lid traps steam and sets the whites while the yolks stay soft.
  • Lower the heat. Medium-low keeps the bottom of the hash from scorching while the eggs cook.

Sweet Potato Hash Questions

How do I know the eggs are done?

The whites should be fully set and opaque. Cook 4–5 minutes for runny yolks and 6–7 for firm ones.

Do I have to peel the sweet potatoes?

No. Scrubbed skins are fine to eat and add a little texture.
