Loaded nachos are tortilla chips layered with seasoned ground beef, black beans and plenty of melted cheese, finished with fresh toppings when they come out of the oven.
A sheet pan of nachos feeds eight as an appetizer or four as dinner. Beans stretch the meat, and it’s a good home for the last of a bag of chips, the end of a block of cheese and whatever toppings are in the fridge.
They take about 25 minutes from start to finish.
Ingredients and Swaps
- Chips: Thick, sturdy tortilla chips. Thin restaurant-style chips go soggy and break under the toppings.
- Meat: Ground beef or turkey with taco seasoning. Shredded chicken or leftover chili work, too.
- Beans: Black beans, or pinto or refried beans.
- Cheese: Cheddar, Monterey Jack or a Mexican blend, shredded from a block for the best melt.
- Toppings: Tomatoes, jalapeños and green onions, plus sour cream, guacamole or salsa.
Tips for Nachos That Aren’t Soggy
- Build two layers. Half of the chips, half of the toppings, then repeat. Every chip gets something on it.
- Drain the meat and beans. Extra liquid is what makes chips soggy.
- Put cheese on every layer. It holds the toppings in place.
- Add cold toppings after baking. Tomatoes, sour cream and guacamole go on at the end.
- Serve from the pan. Nachos are best in the first 15 minutes.

Ingredients
Method
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook ground meat with taco seasoning until fully cooked.
- On a large baking sheet or oven-safe dish, layer half the tortilla chips.
- Sprinkle half of the cooked meat, beans, and cheese over the chips. Repeat with remaining chips and toppings.
- Bake 8–10 minutes or until cheese is fully melted.
- Remove from oven and top with fresh tomatoes, jalapeños, green onions, and optional sour cream or guacamole.
- Serve immediately.
Notes
- Swap ground beef for shredded chicken or carnitas.
- Make vegetarian by using extra beans and roasted veggies instead of meat.
- Add pickled jalapeños or hot sauce for extra heat.
- Use different cheeses for a creamier or sharper flavor.
Variations
- Chicken: Use 2 cups of shredded chicken tossed with taco seasoning.
- Vegetarian: Skip the meat and use two cans of beans plus a cup of corn.
- Chili nachos: Spoon leftover Game Day Chili over the chips in place of the meat and beans.
Storage and Reheating
- Nachos don’t keep well once assembled. Make only what you’ll eat.
- Leftover meat and beans keep for up to 4 days and can top a fresh batch.
- If you do have leftovers, reheat at 350°F for 5–7 minutes. The microwave makes the chips chewy.
