These Easy Fried Eggs take about five minutes and work on top of almost anything: toast, rice, a burger, last night’s leftovers. Once you know the basic method, you can cook them sunny-side up, over easy, over medium or over hard, depending on how you like your yolk.

A fried egg is also one of the cheapest ways to turn a plain plate into a meal. With grocery prices where they are, that matters. An egg on a bowl of rice and vegetables adds protein and makes dinner feel finished for very little money.

The method is the same every time. Use a nonstick skillet, keep the heat at medium-low and give the whites time to set. The only thing that changes is whether you flip the egg and how long you leave it.

Ingredients

  • Eggs: Large eggs, as fresh as you have. Fresh eggs have tighter whites that don’t spread across the pan.
  • Butter or oil: Butter gives more flavor and lacy edges. Oil handles a little more heat.
  • Salt and pepper: Added in the pan or at the table.

Tips for Perfect Fried Eggs

  • Use a nonstick skillet. Eggs release cleanly and flipping is easy.
  • Keep the heat at medium-low. If the edges brown before the whites set, the heat is too high.
  • Crack into a bowl first. It keeps shells and broken yolks out of the pan, and lets you slide the egg in gently.
  • Cover for sunny-side up. A lid for the last 30–60 seconds sets the top of the white without flipping.
  • Flip gently. Slide the spatula all the way under the egg and turn it over close to the pan.

Total Time 5 minutes
Servings: 1 servings
Course: Breakfast
Cuisine: American

Ingredients

  • 2 large eggs
  • 2 teaspoons butter or oil
  • Salt and black pepper to taste

Method

  1. Melt the butter in a nonstick skillet over medium-low heat.
  2. Crack the eggs into the pan, leaving space between them. Cook for 2–3 minutes, until the whites are set and no longer clear.
  3. For sunny-side up, cover the pan for the last 30–60 seconds so the top of the whites sets, then slide the eggs onto a plate.
  4. For over easy, gently flip each egg with a thin spatula and cook for 30 seconds more. Cook for 1 minute for over medium or 2 minutes for over hard.
  5. Season with salt and pepper and serve right away.

Notes

  • Crack each egg into a small bowl first if you’re worried about shells or a broken yolk, then slide it into the pan.
  • If the edges are browning before the whites set, the heat is too high. Turn it down.
  • Butter adds flavor. Oil gives slightly crispier edges.
  • Runny yolks aren’t fully cooked. For anyone who should avoid undercooked eggs, cook them over hard.

Fried Egg Styles at a Glance

  • Sunny-side up: Not flipped. The white is set and the yolk is runny.
  • Over easy: Flipped and cooked for about 30 seconds. The yolk is still runny.
  • Over medium: Flipped and cooked for about 1 minute. The yolk is thick and jammy.
  • Over hard: Flipped and cooked for about 2 minutes. The yolk is fully set.

Fried Egg Questions

Are runny yolks safe?

Runny yolks aren’t fully cooked. Young children, pregnant women, older adults and anyone with a weakened immune system should eat eggs cooked until the yolk is firm.

Why do my eggs stick?

The pan isn’t nonstick or there isn’t enough fat. Make sure the butter coats the whole surface before the eggs go in.
