Pigs in a blanket are cocktail sausages wrapped in pastry and baked until golden. This version uses puff pastry, which bakes up flakier and more buttery than the usual crescent dough.
They need three ingredients and about 15 minutes of prep. A sheet of puff pastry and a package of cocktail sausages make a plate of appetizers that looks far more impressive than its cost.
Serve them hot with mustard for dipping. They disappear quickly, so make a double batch for a crowd.
Ingredients and Swaps
- Puff pastry: One sheet of frozen puff pastry, thawed in the fridge overnight or on the counter for about 40 minutes. Crescent roll dough is an easy substitute.
- Sausages: Mini smoked sausages or cocktail franks. Regular hot dogs cut into thirds work too.
- Egg: Beaten, for a shiny golden finish.
- Toppings: Sesame seeds, poppy seeds or everything bagel seasoning.
Tips for Flaky, Golden Pigs in a Blanket
- Dry the sausages. Pat them with paper towels so the pastry isn’t soggy inside.
- Keep the pastry cold. If it turns soft and sticky, chill it for 10 minutes. Cold pastry puffs better.
- Seam side down. It keeps the pastry from unrolling as it bakes.
- Leave space. Set them an inch or two apart so the pastry can puff and brown.

Pigs in a Blanket
Ingredients
Method
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Unfold the puff pastry on a lightly floured surface and cut it into 12 even strips.
- Wrap one strip around each sausage, overlapping slightly, and place seam side down on the baking sheet.
- Brush the tops with the beaten egg and sprinkle with sesame seeds, if using.
- Bake for 18–20 minutes, until puffed and golden brown.
- Serve warm with mustard or your favorite dipping sauce.
Notes
- Spread a thin layer of Dijon mustard on the pastry before wrapping.
- Everything bagel seasoning is a good topping in place of sesame seeds.
- Plant-based sausages work, too.
Dipping Sauces
Whole-grain or Dijon mustard is the classic. Honey mustard, ketchup, barbecue sauce and warm cheese sauce are all good, too. Putting out two or three lets everyone pick.
Make-Ahead, Storage and Reheating
- Make ahead: Assemble up to a day ahead, cover and refrigerate on the baking sheet. Brush with egg just before baking.
- Freeze unbaked: Freeze on a sheet pan, then store in a freezer bag for up to 2 months. Bake from frozen, adding 3–5 minutes.
- Store baked: Refrigerate for up to 3 days.
- Reheat: Warm at 350°F for 8–10 minutes, until crisp. The microwave makes the pastry soft.
More party bites: Smoky Cheddar Twists, Jalapeño Poppers and Classic Deviled Eggs.
