These turkey stuffed sweet potatoes are baked, split open and filled with garlicky ground turkey, wilted spinach and burst cherry tomatoes. Each one is a complete dinner.

Sweet potatoes are an inexpensive base, and a pound of ground turkey fills four of them. The recipe is part of our week of dinners from 10 ingredients, so nothing you buy for it goes to waste.

The potatoes bake unattended, and the filling takes 15 minutes.

Ingredients and Swaps

  • Sweet potatoes: Medium, about the same size so they finish together.
  • Ground turkey: Or ground chicken, or diced cooked chicken breast.
  • Spinach and cherry tomatoes: Cooked into the turkey at the end. Kale works with a little more time.
  • Garlic, paprika and chili flakes: Simple seasonings that suit the sweetness of the potato.

Tips for Stuffed Sweet Potatoes

  • Bake until very soft. A knife should slide into the center with no resistance.
  • Start the filling late. Begin about 15 minutes before the potatoes are done so both are hot together.
  • Brown the turkey. Let it sit in the pan to pick up color before breaking it up.
  • Fluff the potato. Mash the inside lightly with a fork and season it before adding the filling.

Ingredients

  • 4 medium sweet potatoes scrubbed
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 3 cloves garlic minced
  • ½ teaspoon paprika
  • 3 cups fresh spinach
  • 1 cup cherry tomatoes halved
  • ¼ teaspoon chili flakes optional
  • Salt and black pepper to taste

Method

  1. Preheat the oven to 400°F. Pierce the sweet potatoes with a fork and bake on a lined sheet pan for 45–50 minutes, until very soft.
  2. About 15 minutes before they’re done, heat the oil in a skillet over medium-high heat. Add the turkey and cook 6–7 minutes, breaking it up, until browned.
  3. Stir in the garlic, paprika, salt, and pepper and cook 1 minute.
  4. Add the spinach and cherry tomatoes and cook 2–3 minutes, until the spinach wilts.
  5. Slice the sweet potatoes open, fluff the insides, and season with salt and pepper.
  6. Spoon the turkey filling generously into each potato and sprinkle with chili flakes, if using.

Notes

  • Microwave the sweet potatoes for 8–10 minutes to save time.
  • Use chicken breast, diced and cooked, instead of turkey.
  • Add a drizzle of olive oil on top for richness.
  • Leftover filling freezes well.

Toppings

A drizzle of olive oil, a spoonful of Greek yogurt or Lemon Herb Yogurt Sauce, crumbled feta or hot sauce. For a barbecue version, see BBQ Chicken Stuffed Sweet Potatoes.

Storage and Reheating

  • Refrigerate in an airtight container for up to 4 days. Storing the filling and potatoes separately keeps them at their best.
  • Reheat in the microwave or a skillet with a splash of water until hot.
