This Lemon Parmesan Roasted Asparagus is tender, lightly crisp at the tips and bright with lemon. It takes five minutes to prep and about twelve in the oven, which makes it one of the fastest sides you can put on a holiday table.
Asparagus can feel like a splurge when every item in the cart costs more than it used to. Spring is when it’s in season, so that’s the time to look for it on sale. A hot oven and a few pantry seasonings are all it needs.
Everything roasts on one rimmed sheet pan. Spread the spears in a single layer so they roast instead of steam, and add the Parmesan and lemon as soon as they come out.
Serve it with ham at Easter, or with chicken or pasta any night of the week.
Ingredients and Swaps
- Asparagus: Two pounds, about two bunches. Look for firm stalks with tight tips. Halve the recipe for four.
- Garlic: Fresh, or ½ teaspoon of garlic powder.
- Parmesan: Grated. The shaker kind is fine here.
- Lemon: Zest for flavor and wedges for squeezing at the table.
- Out of season: Green beans or broccoli work with the same seasoning. Roast them a few minutes longer.
Tips for Tender-Crisp Asparagus
- Trim the woody ends. Bend one spear until it snaps. It breaks where the tender part begins. Cut the rest to match.
- Dry the spears. Water on the pan creates steam and keeps them from browning.
- Use a single layer. Spread them on a large sheet pan, or use two.
- Watch the time. Thin spears cook in 8–10 minutes and thick ones take 12–15, so start checking early.

Roasted Asparagus Questions
Do I need to peel asparagus?
No. Only very thick, tough stalks benefit from peeling the bottom couple of inches.
Why is my asparagus stringy or mushy?
Stringy means the woody ends weren’t trimmed far enough. Mushy means it roasted too long.
