This sheet pan sausage and veggies dinner roasts smoked sausage with potatoes, bell peppers, zucchini and red onion in a smoky spice blend. Everything cooks on one pan.
Smoked sausage is inexpensive, already cooked and full of flavor, so it seasons the vegetables as it roasts. The vegetables can be whatever is on sale.
Ten minutes of chopping, 25 minutes in the oven and one pan to wash.
Ingredients and Swaps
- Smoked sausage: Kielbasa or any fully cooked smoked sausage. Chicken or turkey sausage is lighter.
- Potatoes: Baby potatoes, halved. They get a head start in the oven.
- Vegetables: Bell peppers, zucchini and red onion. Broccoli, green beans and sweet potatoes also work.
- Seasoning: Garlic powder, smoked paprika and Italian seasoning.
Tips for a Sheet Pan Dinner
- Start the potatoes first. They take the longest, so they roast alone for the first 10 minutes or so.
- Cut the vegetables to similar sizes. About 1 inch, so they finish together.
- Don’t crowd the pan. Use two pans if needed so everything roasts.
- Toss halfway. It browns more sides and coats the vegetables in the sausage drippings.

Sausage and Veggie Questions
Can I use raw sausage?
Yes. Use whole links, add them with the potatoes and roast until they reach 160°F, then slice.
Can I prep it ahead?
Yes. Chop the vegetables and slice the sausage up to a day ahead. Keep the potatoes in water so they don’t brown.
