Ingredients
  

  • 1 whole chicken (3–4 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 lemon, halved
  • Fresh thyme or rosemary
  • 4 garlic cloves

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Pat chicken dry and rub with oil and seasonings.
  3. Stuff cavity with lemon, garlic, and herbs.
  4. Roast 1 hour 10–20 minutes until internal temperature reaches 165°F.
  5. Rest 10 minutes before carving.
