Vegetarian Stuffed Peppers

Ingredients
  

  • 2 large bell peppers
  • 1 cup cooked rice
  • ½ cup canned black beans rinsed
  • ¼ cup tomato sauce
  • ½ tsp cumin
  • Salt and pepper to taste
  • ¼ cup shredded cheese (optional)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off peppers and remove seeds.
  3. Mix rice, beans, sauce, and seasoning.
  4. Stuff mixture into peppers.
  5. Place in baking dish and cover with foil.
  6. Bake 25 minutes; uncover and add cheese if using.

Notes

  • Add corn or sautéed onions.
  • Use quinoa instead of rice.
  • Make vegan by skipping cheese.
