Method
- Preheat oven to 375°F (190°C).
- Cut tops off peppers and remove seeds.
- Mix rice, beans, sauce, and seasoning.
- Stuff mixture into peppers.
- Place in baking dish and cover with foil.
- Bake 25 minutes; uncover and add cheese if using.
Notes
- Add corn or sautéed onions.
- Use quinoa instead of rice.
- Make vegan by skipping cheese.
