Method
- Preheat oven to 350°F (175°C).
- Rub roast with olive oil, garlic, salt, pepper, thyme, and rosemary.
- Place on a roasting rack and cook for 60–75 minutes, or until internal temperature reaches 135°F (57°C) for medium-rare.
- Rest for 10 minutes before slicing thinly.
