Ingredients
  

  • 2 lb top round roast
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Rub roast with olive oil, garlic, salt, pepper, thyme, and rosemary.
  3. Place on a roasting rack and cook for 60–75 minutes, or until internal temperature reaches 135°F (57°C) for medium-rare.
  4. Rest for 10 minutes before slicing thinly.
