Ingredients
  

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 can black beans, drained
  • 1 can diced tomatoes
  • ½ cup shredded cheese
  • Salt and pepper, to taste

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off peppers and remove seeds.
  3. Mix rice, beans, tomatoes, and seasoning.
  4. Stuff mixture into peppers.
  5. Place in baking dish and top with cheese.
  6. Bake for 35 minutes.
