Method
- Preheat oven to 325°F.
- Remove giblets and neck from turkey cavity, pat turkey dry with paper towels.
- Season inside cavity with salt, pepper, onion quarters, and celery.
- Rub skin with butter, then sprinkle with poultry seasoning, rosemary, and sage.
- Place on a rack in a roasting pan, breast-side up.
- Roast 3–4 hours, or until the internal temperature reaches 165°F in the thigh.
- Baste occasionally with broth or drippings.
- Rest for 20–30 minutes before carving.
Notes
- Add a halved lemon to the cavity for a bright flavor.
- Make quick gravy with pan drippings + gravy mix + broth.
