Roasted Whole Turkey with Herbs

Ingredients
  

  • 1 whole turkey (12–14 lb)
  • 4 tbsp butter softened
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp poultry seasoning
  • 1 tsp dried rosemary
  • 1 tsp dried sage
  • 1 onion quartered
  • 2 celery stalks cut in half
  • 1 cup chicken broth (for basting or gravy)

Method
 

  1. Preheat oven to 325°F.
  2. Remove giblets and neck from turkey cavity, pat turkey dry with paper towels.
  3. Season inside cavity with salt, pepper, onion quarters, and celery.
  4. Rub skin with butter, then sprinkle with poultry seasoning, rosemary, and sage.
  5. Place on a rack in a roasting pan, breast-side up.
  6. Roast 3–4 hours, or until the internal temperature reaches 165°F in the thigh.
  7. Baste occasionally with broth or drippings.
  8. Rest for 20–30 minutes before carving.

Notes

  • Add a halved lemon to the cavity for a bright flavor.
  • Make quick gravy with pan drippings + gravy mix + broth.
