Method
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook chorizo until browned and cooked through, breaking into small pieces.
- Add onion, pepper, and garlic; sauté until softened, 3–4 minutes.
- Remove from heat and transfer mixture to a small oven-safe skillet or baking dish.
- Top with shredded cheeses, pepper, and paprika.
- Bake uncovered for 10–15 minutes, or until cheese is melted and bubbly.
- Garnish with fresh cilantro and serve immediately with tortilla chips or warm tortillas.
