Ingredients
  

  • 1 lb ground beef or turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 2 cups uncooked pasta (rotini or shells)
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded Mexican-blend cheese

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Brown ground meat until fully cooked; drain excess fat.
  3. Stir in taco seasoning, pasta, broth, and tomatoes.
  4. Bring to a boil, reduce heat, and simmer uncovered 15–18 minutes.
  5. Stir in cheese until melted and creamy.
