Ingredients

  • 1 tablespoon olive oil
  • 1¼ pounds ground turkey
  • 1 large onion diced
  • 1 bell pepper diced
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans drained and rinsed
  • 1 can (15 oz) black beans drained and rinsed
  • 1½ cups low-sodium chicken broth
  • Salt and black pepper to taste

Method

  1. Heat the oil in a large pot over medium-high heat. Add the turkey and cook for 6–7 minutes, breaking it up, until browned.
  2. Add the onion and bell pepper and cook for 5 minutes, until softened. Stir in the garlic and cook 1 minute.
  3. Add the tomato paste, chili powder, cumin, smoked paprika, and oregano. Cook for 1–2 minutes, stirring.
  4. Stir in the crushed tomatoes, beans, and broth. Bring to a boil.
  5. Reduce the heat and simmer, partially covered, for 25–30 minutes, stirring occasionally, until thickened.
  6. Season with salt and pepper and serve with your favorite toppings.

Notes

  • Add a diced jalapeño or ¼ teaspoon cayenne for more heat.
  • Stir in 1 cup frozen corn during the last 10 minutes.
  • Slow cooker: brown the turkey, then cook everything on low for 6–8 hours.
  • Ground chicken or lean beef also work.
