Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 cup dried brown or green lentils
  • 1 potato, diced
  • 1 teaspoon cumin
  • ½ teaspoon thyme
  • 6 cups vegetable broth
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and carrots; cook until softened.
  3. Stir in garlic, cumin, and thyme.
  4. Add lentils, potato, and broth.
  5. Bring to a boil, reduce heat, and simmer 30–35 minutes.
  6. Season with salt and pepper before serving.
