Ingredients
  

  • 1 boneless turkey breast (2–2.5 lbs)
  • 3 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Pat turkey breast dry and place it in a roasting dish.
  3. In a small bowl, mix softened butter with garlic, rosemary, thyme, salt, and pepper.
  4. Rub the herbed butter all over the turkey, including under the skin if possible.
  5. Drizzle olive oil over the top and roast for 55–65 minutes, or until internal temperature reaches 165°F (74°C).
  6. Rest for 10 minutes before slicing.
