Method
- Whisk egg yolks and sugar until pale and thick.
- Heat milk, cream, nutmeg, and cinnamon until steaming (not boiling).
- Slowly whisk hot milk into yolks to temper.
- Pour mixture back into the pot and cook on low until slightly thickened.
- Remove from heat and stir in vanilla (and rum if using).
- Chill or serve warm with extra nutmeg on top.
