Ingredients

  • 1 pound ground beef
  • 2 tablespoons taco seasoning or 1 packet
  • ⅓ cup water
  • 1 large head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup corn drained or thawed
  • 1 cup shredded cheddar
  • 3 green onions sliced
  • 2 cups tortilla chips lightly crushed
  • ½ cup salsa
  • ¼ cup ranch dressing
  • Sour cream and lime wedges for serving

Method

  1. Brown the ground beef in a skillet over medium-high heat for 6–7 minutes, breaking it up. Drain any excess fat.
  2. Stir in the taco seasoning and water and simmer 2–3 minutes until thickened.
  3. Stir together the salsa and ranch to make the dressing.
  4. Divide the romaine among bowls. Top with the beef, tomatoes, corn, cheddar and green onions.
  5. Add the crushed tortilla chips, drizzle with the dressing and serve with sour cream and lime.

Notes

  • Use ground turkey instead of beef if it’s cheaper.
  • Add a can of drained black beans to stretch the beef further.
  • Make your own taco seasoning with chili powder, cumin, garlic powder, paprika and salt.
  • Serve it in tortilla bowls for a fun weekend version.
