  • 2 cucumbers sliced
  • 3 medium tomatoes cut into wedges, or 2 cups cherry tomatoes
  • ½ red onion thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon sugar
  • 2 tablespoons fresh dill or parsley chopped
  • Salt and black pepper to taste

Method

  1. Add the cucumbers, tomatoes and red onion to a large bowl.
  2. Whisk together the olive oil, red wine vinegar, sugar, salt and pepper.
  3. Pour the dressing over the vegetables and toss gently.
  4. Sprinkle with the fresh herbs.
  5. Let sit for 10–15 minutes, then toss again and serve.

Notes

  • English or mini cucumbers don’t need peeling or seeding.
  • Add crumbled feta or sliced olives for a Greek twist.
  • Swap the red wine vinegar for apple cider vinegar.
  • Use the ripest tomatoes you can find; they make the biggest difference.
