Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 3 cups chicken broth
  • ½ cup heavy cream or evaporated milk
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 cups uncooked penne pasta
  • 2 cups fresh baby spinach
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Method
 

  1. Add chicken breasts, broth, sun-dried tomatoes, garlic powder, and Italian seasoning to the crockpot.
  2. Cover and cook on low for 5–6 hours or until chicken is tender.
  3. Remove chicken, shred it with two forks, and return to the pot.
  4. Stir in cream, pasta, and spinach. Cover and cook on high for 30 minutes, or until pasta is tender.
  5. Add Parmesan and stir until creamy.
