Ingredients
  

  • 2 lbs chicken wings, separated into flats and drumettes
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Optional sauces: buffalo, BBQ, teriyaki, or honey-garlic

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat wings dry with paper towels.
  3. In a large bowl, toss wings with baking powder, salt, pepper, garlic powder, and smoked paprika until evenly coated.
  4. Arrange wings on the wire rack in a single layer, leaving space between each.
  5. Bake for 40–45 minutes, flipping halfway, until wings are golden and crispy.
  6. Toss baked wings in your favorite sauce if desired, and serve immediately.
