Method
- Season salmon with salt and pepper.
- Heat olive oil in a skillet and sear salmon 3–4 minutes per side. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Pour in cream and parmesan; simmer until slightly thickened.
- Add spinach and cook until wilted.
- Return salmon to the pan and cook 2 minutes to warm through.
- Serve immediately, spooning sauce on top.
