Method
- Season the chicken breasts on both sides with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5–6 minutes per side, until golden brown and cooked through. Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Simmer for 3–4 minutes.
- Reduce heat to low. Whisk in Greek yogurt and Parmesan cheese until smooth.
- If a thicker sauce is desired, whisk cornstarch with 1 tablespoon water and stir into the sauce.
- Return chicken to the skillet and spoon sauce over the top. Simmer gently for 3–5 minutes.
- Garnish with fresh parsley and serve warm.
