Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup plain Greek yogurt
  • ⅓ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 1 teaspoon cornstarch (optional, for thicker sauce)
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Season the chicken breasts on both sides with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5–6 minutes per side, until golden brown and cooked through. Remove chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Simmer for 3–4 minutes.
  5. Reduce heat to low. Whisk in Greek yogurt and Parmesan cheese until smooth.
  6. If a thicker sauce is desired, whisk cornstarch with 1 tablespoon water and stir into the sauce.
  7. Return chicken to the skillet and spoon sauce over the top. Simmer gently for 3–5 minutes.
  8. Garnish with fresh parsley and serve warm.
