Ingredients
  

  • 1 lb fresh spinach (or 10 oz frozen)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk or cream
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon nutmeg

Method
 

  1. Sauté spinach until wilted; drain excess liquid.
  2. Melt butter, whisk in flour, and cook 1 minute.
  3. Add milk and whisk until thickened.
  4. Stir in spinach, salt, pepper, and nutmeg.
  5. Simmer 2–3 minutes.
