Cheesy One-Pot Chicken and Rice

Ingredients
  

  • 1 lb boneless, skinless chicken thighs or breasts, diced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2½ cups chicken broth
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until lightly browned, about 4–5 minutes.
  3. Stir in onion and garlic; cook until softened.
  4. Add rice, broth, paprika, salt, and pepper. Stir well.
  5. Bring to a boil, reduce heat, cover, and simmer for 18–20 minutes.
  6. Remove from heat and stir in shredded cheese until melted.
