Method
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until lightly browned, about 4–5 minutes.
- Stir in onion and garlic; cook until softened.
- Add rice, broth, paprika, salt, and pepper. Stir well.
- Bring to a boil, reduce heat, cover, and simmer for 18–20 minutes.
- Remove from heat and stir in shredded cheese until melted.
