Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast, diced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup frozen peas or broccoli (optional)

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until no longer pink, about 5–6 minutes.
  3. Stir in rice, chicken broth, salt, and pepper.
  4. Bring to a simmer, cover, and cook for 15–18 minutes until rice is tender.
  5. Stir in milk, cheese, and vegetables if using.
  6. Cook uncovered for 2–3 minutes until creamy and melted.
