Bean u0026amp; Cheese Quesadillas

Ingredients
  

  • 4 flour tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese
  • ½ teaspoon cumin
  • Salt, to taste
  • Cooking spray or oil

Method
 

  1. Mash beans slightly and season with cumin and salt.
  2. Spread beans on half of each tortilla.
  3. Sprinkle cheese over beans.
  4. Fold tortillas in half.
  5. Cook in a skillet over medium heat until golden on both sides.
