Ingredients

  • 1 pound lean ground beef or ground turkey
  • 1 packet (1 oz) taco seasoning
  • ⅔ cup water
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup frozen corn
  • 3 cups cooked white or brown rice warm
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • Sour cream, salsa, and sliced avocado for serving

Method

  1. Cook the ground beef in a large skillet over medium-high heat for 6–7 minutes, breaking it up, until browned. Drain excess fat.
  2. Stir in the taco seasoning and water. Simmer for 3–4 minutes until thickened.
  3. Push the beef to one side and add the black beans and corn. Cook 3–4 minutes, until heated through.
  4. Divide the rice among bowls. Top with taco beef, beans, and corn.
  5. Add cheese, lettuce, tomatoes, and your favorite toppings, and serve.

Notes

  • Use microwave rice pouches to save even more time.
  • Make it vegetarian by doubling the beans and skipping the beef.
  • Swap rice for cauliflower rice for a lower-carb bowl.
  • A squeeze of lime brightens everything.
